Ingredients
- 2 pounds yellow potatoes cut into cubes
- salt
- 1 teaspoon baking soda
- 1/2 cup rendered duck fat
- 3 cloves garlic minced
- 3 sprigs thyme
- 1 sprig rosemary
- SEASONING
- 1 teaspoon Newman's Own salt vinegar powder
- 1/4 teaspoon ground fennel seeds
- 1/4 teaspoon black pepper
- 1/2 teaspoon sugar
- ketchup for drizzling
How To Make salt and vinegar duck fat potatoes

Step 1Boil a pot of water with salt and baking soda. Add the potato cubes and boil for 10 minutes. Drain and add back to the pan, and give them a good shake.

Step 2Preheat oven to 425 degrees F. Place the duck fat in a saucepan and add the garlic, thyme, and rosemary. When melted, pour over the potatoes and shake to cover them. Spread the potatoes out in a single layer on a parchment-lined baking sheet.

Step 3Bake for 45 minutes to an hour. Mix the seasoning ingredients together and shake over the potatoes once crispy. Drizzle with ketchup if desired.
