  • 2 lb
    yellow potatoes cut into cubes
  • salt
  • 1 tsp
    baking soda
  • 1/2 c
    rendered duck fat
  • 3 clove
    garlic minced
  • 3 sprig
    thyme
  • 1 sprig
    rosemary
  • SEASONING
  • 1 tsp
    Newman's Own salt vinegar powder
  • 1/4 tsp
    ground fennel seeds
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    sugar
  • ketchup for drizzling

How To Make salt and vinegar duck fat potatoes

    Boil a pot of water with salt and baking soda. Add the potato cubes and boil for 10 minutes. Drain and add back to the pan, and give them a good shake.

    Preheat oven to 425 degrees F. Place the duck fat in a saucepan and add the garlic, thyme, and rosemary. When melted, pour over the potatoes and shake to cover them. Spread the potatoes out in a single layer on a parchment-lined baking sheet.

    Bake for 45 minutes to an hour. Mix the seasoning ingredients together and shake over the potatoes once crispy. Drizzle with ketchup if desired.
