Ingredients

2 lb
fingerling medley potatoes, sliced length wise
1
(16-oz) pkg mushrooms, fresh sliced or whole
3
green onions, snipped
1 tsp
rosemary garlic seasoning
1 tsp
kosher salt, coarse
1/4 tsp
pepper
2 Tbsp
white truffle oil

How to Make Rosemary Garlic Fingerling Potatoes

Step-by-Step

  • 1Preheat oven to 400 degrees.
  • 2Slice potatoes length wise, rinse. Place in a mixing bowl or ziploc bag, sprinkle with seasonings. Drizzle with oil and toss to combine.
  • 3Place potatoes in baking dish, cover and bake for 40 to 45 minutes or until potatoes are tender.
