Potatoes and rosemary are the best combo ever and this is a quick and easy side dish full of flavor. Hope you enjoy!

Ingredients

  • 2 pounds fingerling medley potatoes, sliced length wise
  • 1 - (16-oz) pkg mushrooms, fresh sliced or whole
  • 3 - green onions, snipped
  • 1 teaspoon rosemary garlic seasoning
  • 1 teaspoon kosher salt, coarse
  • 1/4 teaspoon pepper
  • 2 tablespoons white truffle oil

How To Make rosemary garlic fingerling potatoes

  • Step 1
    Preheat oven to 400 degrees.
  • Step 2
    Slice potatoes length wise, rinse. Place in a mixing bowl or ziploc bag, sprinkle with seasonings. Drizzle with oil and toss to combine.
  • Step 3
    Place potatoes in baking dish, cover and bake for 40 to 45 minutes or until potatoes are tender.
