Ingredients
- 2 - large sweet potatoes (about 2 lbs.) , peeled and cut into 1 inch chunks
- 2 - medium walla walla sweet onions, or vidalia or texas, cut into 1 inch chunks
- 3 tablespoons olive oil
- 1/4 cup amaretto liqueur
- 1 teaspoon dried thyme
- --- - salt and pepper to taste
- 1/4 cup sliced almonds, toasted (425 degrees 5 min.)
How To Make roasted sweet potatoes and onions

Step 1Heat oven to 425 degrees. Toss the first 6 ingredients in a shallow medium-sized baking dish. Cover; bake 30 minutes. Uncover and bake 20 minutes more. Sprinkle with toasted almonds before serving.
