    large sweet potatoes (about 2 lbs.) , peeled and cut into 1 inch chunks
  • 2
    medium walla walla sweet onions, or vidalia or texas, cut into 1 inch chunks
  • 3 Tbsp
    olive oil
  • 1/4 c
    amaretto liqueur
  • 1 tsp
    dried thyme
  • ---
    salt and pepper to taste
  • 1/4 c
    sliced almonds, toasted (425 degrees 5 min.)

How to Make Roasted Sweet Potatoes and Onions


  1. Heat oven to 425 degrees. Toss the first 6 ingredients in a shallow medium-sized baking dish. Cover; bake 30 minutes. Uncover and bake 20 minutes more. Sprinkle with toasted almonds before serving.
