Ingredients
- 4 - sweet potatoes, large
- 6 tablespoons olive oil, extra virgin
- 6 teaspoons kosher salt
- 4 teaspoons cinnamon, ground
- 3 teaspoons chili powder
- 1 tablespoon honey
- 1 - 2 - limes
- 1 bunch cilantro, fresh
How To Make roasted sweet potato salad

Step 1Pre-heat oven on to 425 degrees. Peel and dice sweet potatoes and add to a large bowl. Coat with oil and season with salt, cinnamon, chili powder, and good quality honey. Stir well. Lay on a sheet tray and cook in oven for about 25 minutes. The potatoes should be tender but not falling apart.

Step 2While potatoes are cooking chop cilantro. When potatoes are finished add back to mixing bowl. Add cilantro and lime juice while potatoes are still hot and stir well. I suggest to only add small amounts of lime at a time since it can be overpowering depending on intensity of potato flavor and gets stronger as salad cools. Then season with extra salt if needed.
