This a fun and simple salad that I like to make for parties and gatherings.

sweet potatoes, large
6 Tbsp
olive oil, extra virgin
6 tsp
kosher salt
4 tsp
cinnamon, ground
3 tsp
chili powder
1 Tbsp
1 - 2
1 bunch
cilantro, fresh

How to Make Roasted Sweet Potato Salad


  • 1Pre-heat oven on to 425 degrees. Peel and dice sweet potatoes and add to a large bowl. Coat with oil and season with salt, cinnamon, chili powder, and good quality honey. Stir well. Lay on a sheet tray and cook in oven for about 25 minutes. The potatoes should be tender but not falling apart.
  • 2While potatoes are cooking chop cilantro. When potatoes are finished add back to mixing bowl. Add cilantro and lime juice while potatoes are still hot and stir well. I suggest to only add small amounts of lime at a time since it can be overpowering depending on intensity of potato flavor and gets stronger as salad cools. Then season with extra salt if needed.
  • 3Serve room temperature.
