mertzie's roasted red potatoes
Smashed potatoes seem to be the rage, so I wanted to make my own. Definitely will make again! Delicious.

Ingredients
- 12-15 - redskin baby potatoes
- 1 - shallot
- - olive oil
- - 1/2 stick butter
- - garlic salt (i use penzey's)
- - fresh flat-leaf parsley
How To Make mertzie's roasted red potatoes

Step 1Boil the potatoes until tender, about 20 minutes. Heat oven to 400.

Step 2Put foil on a cookie sheet & spray w/ cooking spray, such as Pam.

Step 3When potatoes are done, toss them in some olive oil & lay out on sheet. Smash down with a potato masher to get flattened a bit. Turn over and flatten a bit more, if you need.

Step 4Grate shallots in a bowl & mix with 1/2 stick of melted butter. Brush this on top of each potato. Then sprinkle generously with garlic salt. Sprinkle with some parsley and bake for about 30 minutes, or until the tops are nice & brown.
