Ingredients
- 2 pounds baby potatoes, cut in half
- 2 tablespoons olive oil
- salt and pepper
- parsley, for garnish
- AIOLI
- 4 cloves garlic, minced
- 2 teaspoons Dijon mustard
- 1 large egg
- 2 large egg yolks
- olive oil
- 1 teaspoon lemon juice
- salt and pepper
- BUTTERED PINE NUTS
- 2 tablespoons butter
- 3 tablespoons pine nuts
- 1/4 teaspoon smoked paprika
How To Make roasted potatoes with aioli and buttered pine nuts

Step 1Preheat the oven to 450 degrees F. Place the potatoes in a pot and cover them with cold water. Add plenty of salt and bring to a boil. Keep at a light boil and boil for about 6 minutes. Drain and dry the potatoes.

Step 2Place some parchment paper on a large baking sheet. Lay the potatoes in a single layer and drizzle olive oil over the potatoes, and season with salt.

Step 3Place in the oven and brown them up, about 35 minutes, stirring once in a while.

Step 4Meanwhile, make the Aioli and pine nuts. In a food processor, add the garlic, Dijon, egg, and egg yolks. Process, drizzling in the olive oil until a mayonnaise consistency is achieved. Stir in the lemon juice and season with salt.

Step 5For the pine nuts, place the pine nuts in a dry pan and roast over the flame until brown. Add the butter and paprika and mix well. Set aside.

Step 6Serve the aioli over the potatoes with the pine nuts and parsley for garnish.
