Roasted Parsley & Scallion Red Potatoes

These are so amazing. It seems like a lot of Parsley but actually it's not.

  • 6 large
    red potatoes, diced into one inch pieces
  • 3 large
    scallions, diced to measure 1 cup
  • 2 c
    parsley, chopped (about 1/2 lg bundle)
  • 1/2 c
    olive oil
  • 6 Tbsp

How to Make Roasted Parsley & Scallion Red Potatoes


  1. have 6 large red potatoes ready and washed
  2. Dice them up discarding any bruises to fill a coated 9x13 casserole dish. (I use the olive oil spray to coat my dish)
  3. Chop up your scallions to equal 1 cup
  4. chop up your parsley to equal 2 cups
  5. pour your olive oil over the potatoes, fold in your onions and parsley. I use my hands to make sure all the oil has coated everything.
  6. Bake at 350 until potatoes are tender, about half way through your baking stir up your mixture. After cooked add your butter on top and heat through.
