roasted parsley & scallion red potatoes
These are so amazing. It seems like a lot of Parsley but actually it's not. You will be so surprised at how wonderful this taste! Enjoy!

Ingredients
- 6 large red potatoes, diced into one inch pieces
- 3 large scallions, diced to measure 1 cup
- 2 cups parsley, chopped (about 1/2 lg bundle)
- 1/2 cup olive oil
- 6 tablespoons butter
How To Make roasted parsley & scallion red potatoes

Step 1have 6 large red potatoes ready and washed

Step 2Dice them up discarding any bruises to fill a coated 9x13 casserole dish. (I use the olive oil spray to coat my dish)

Step 3Chop up your scallions to equal 1 cup

Step 4chop up your parsley to equal 2 cups

Step 5pour your olive oil over the potatoes, fold in your onions and parsley. I use my hands to make sure all the oil has coated everything.

Step 6Bake at 350 until potatoes are tender, about half way through your baking stir up your mixture. After cooked add your butter on top and heat through.
