Roasted Parsley & Scallion Red Potatoes

6 large
red potatoes, diced into one inch pieces
3 large
scallions, diced to measure 1 cup
2 c
parsley, chopped (about 1/2 lg bundle)
1/2 c
olive oil
6 Tbsp

How to Make Roasted Parsley & Scallion Red Potatoes


  • 1have 6 large red potatoes ready and washed
  • 2Dice them up discarding any bruises to fill a coated 9x13 casserole dish. (I use the olive oil spray to coat my dish)
  • 3Chop up your scallions to equal 1 cup
  • 4chop up your parsley to equal 2 cups
  • 5pour your olive oil over the potatoes, fold in your onions and parsley. I use my hands to make sure all the oil has coated everything.
  • 6Bake at 350 until potatoes are tender, about half way through your baking stir up your mixture. After cooked add your butter on top and heat through.
