roasted parsley & scallion red potatoes

These are so amazing. It seems like a lot of Parsley but actually it's not. You will be so surprised at how wonderful this taste! Enjoy!

Ingredients

  • 6 large red potatoes, diced into one inch pieces
  • 3 large scallions, diced to measure 1 cup
  • 2 cups parsley, chopped (about 1/2 lg bundle)
  • 1/2 cup olive oil
  • 6 tablespoons butter

How To Make roasted parsley & scallion red potatoes

  • Step 1
    have 6 large red potatoes ready and washed
  • Step 2
    Dice them up discarding any bruises to fill a coated 9x13 casserole dish. (I use the olive oil spray to coat my dish)
  • Step 3
    Chop up your scallions to equal 1 cup
  • Step 4
    chop up your parsley to equal 2 cups
  • Step 5
    pour your olive oil over the potatoes, fold in your onions and parsley. I use my hands to make sure all the oil has coated everything.
  • Step 6
    Bake at 350 until potatoes are tender, about half way through your baking stir up your mixture. After cooked add your butter on top and heat through.
