Roasted New Potato Salad
2 Tbspolive oil
2 lbsmall red potatoes, diced
1/2 mediumsweet onion, chopped
2 tspminced garlic
1 tspcoarse salt
1/2 tspfreshly ground pepper
·8 to 10 cooked crisp bacon slices, crumbled
1 bunchgreen onions, chopped
3/4 cprepared ranch dressing
·salt and pepper to taste
How to Make Roasted New Potato Salad
- Preheat oven to 425F. Place oil in a 15x10 inch jelly roll pan; add potatoes and next 5 ingredients, toss to coat. Arrange the mixture in a single layer.
- Bake for 30 to 35 minutes or until potatoes are tender, or 40 to 45 minutes for crispier potatoes (this is my preference) stirring occasionally. Then transfer potatoes to a large bowl.
- Toss potatoes, bacon, green onions, and dressing. Salt and pepper to taste. Serve immediately or cover and chill until ready to serve. 4-6 servings
