How to Make Roasted New Potato Salad

  1. Preheat oven to 425F. Place oil in a 15x10 inch jelly roll pan; add potatoes and next 5 ingredients, toss to coat. Arrange the mixture in a single layer.
  2. Bake for 30 to 35 minutes or until potatoes are tender, or 40 to 45 minutes for crispier potatoes (this is my preference) stirring occasionally. Then transfer potatoes to a large bowl.
  3. Toss potatoes, bacon, green onions, and dressing. Salt and pepper to taste. Serve immediately or cover and chill until ready to serve. 4-6 servings
