Some friends were having a potluck and they were serving tacos. This just happened while thinking of what to bring to complement the meal.

  • 5-6 medium
  • 1 pkg
    taco seasoning mix
  • 1/4 c
    cannola or vegetable oil
  • 1 Tbsp
    garlic salt
  • 3/4 c
    cheddar cheese, shredded

How to Make Roasted Mexican Potatoes


  1. Peel and quarter potatoes. Place in large gallon sized plastic bag.
  2. Add vegetable oil. Sprinkle in the taco seasoning mix.
    Shake bag until potatoes are coated with the oil and seasoning.
  3. Place potatoes on greased baking sheet or 9 x 13 pan. Sprinkle with garlic salt. (I sometimes sprinkle with onion powder too.)
  4. Bake in oven at 375 until tender, 20-25 min. Add cheese to the top of potatoes the last 5-10 minutes.
  5. Serve with salsa and sour cream.
