Some friends were having a potluck and they were serving tacos. This just happened while thinking of what to bring to complement the meal.

Ingredients

  • 5-6 medium potatoes
  • 1 package taco seasoning mix
  • 1/4 cup cannola or vegetable oil
  • 1 tablespoon garlic salt
  • 3/4 cup cheddar cheese, shredded

How To Make roasted mexican potatoes

  • Step 1
    Peel and quarter potatoes. Place in large gallon sized plastic bag.
  • Step 2
    Add vegetable oil. Sprinkle in the taco seasoning mix. Shake bag until potatoes are coated with the oil and seasoning.
  • Step 3
    Place potatoes on greased baking sheet or 9 x 13 pan. Sprinkle with garlic salt. (I sometimes sprinkle with onion powder too.)
  • Step 4
    Bake in oven at 375 until tender, 20-25 min. Add cheese to the top of potatoes the last 5-10 minutes.
  • Step 5
    Serve with salsa and sour cream.
