roasted garlic potato salad

There is this store in Highlands, NC that I ABSOLUTELY LOVE, LOVE, LOVE! Colonel Mustards is what it's called. They don't have a website, but here is what I could find ( http://www.yelp.com/biz/colonel-mustards-highlands ). It is a specialty shop that has all sorts of sauces, nuts, honey butter, condiments, etc. Plus, they have samples of EVERYTHING so that you can taste it before you buy it! That is where I picked up this recipe...

Ingredients
- 1 1/2 pounds baking potatoes, scrubbed
- 1 small cucumber, peeled, halved, seeded & diced
- 1 small red bell pepper, seeded & chopped
- 1 large red onion, chopped
- 4 ounces feta cheese, crumbled
- 1/8 cup stonewall kitchen roasted garlic mustard
- 1/8 cup red wine vinegar
- 1/4 cup stonewall kitchen roasted garlic oil
- 3 tablespoons basil, fresh, chopped
- 3 tablespoons parsley, chopped
- salt & pepper, to taste
How To Make roasted garlic potato salad

Step 1Put potatoes in a large pot, cover with water & bring to a boil over high heat. Add some salt & continue cooking until potatoes are just tender when pierced with a knife. Begin testing it around 8 minutes. Times will vary with size of potatoes. Drain & let cool. When cold, cut into fourths or eighths. Combine cucumber, pepper, onion & feta cheese with potatoes and a large bowl.

Step 2Whisk roasted garlic mustard & vinegar together in a small bowl. In a slow stream, whisk roasted garlic oil into mixture to form an emulsion. Stir in basil & parsley. Pour dressing over salad; toss to blend, then season with salt & pepper. Add a couple of fresh the basil leaves as garnish & serve at once.
