roasted garlic mashed red potatoes
Found this online and made last night with steak. Super tasty!!

Ingredients
- 1 - head of garlic
- - olive oil, extra virgin
- 2 pounds red potatoes
- 5 tablespoons butter
- 3/4 cup half and half (can use heavy cream or milk)
- - salt and pepper, to taste
How To Make roasted garlic mashed red potatoes

Step 1Preheat oven to 425 Cut top off of garlic head, exposing each clove. Set in a piece of foil that's big enough to cover whole garlic head. Drizzle with olive oil and wrap up tightly. Roast in oven for 30-35 min. or until tender.

Step 2While your garlic is roasting, wash and cube your potatoes. Put cubed potatoes in a large pot, cover potatoes with cold water, and salt. Bring to a boil and cook until fork tender.

Step 3When your garlic is finished roasting, allow to cool for a few minutes. Then pop out each clove into a small bowl. Use the back of a wooden spoon to smash garlic into a paste.

Step 4When the potatoes are ready, drain and transfer to medium bowl. In the same pot you boiled the potatoes in, combine butter and half & half over medium heat. Heat while stirring until butter is melted.

Step 5Add warm butter/half & half, and garlic paste to potatoes and mash. I would start by adding only half of the butter/half&half mixture while mashing and add more to get to the consistency you prefer. Serve immediately. Enjoy!!
