    red potatoes
  • 5 Tbsp
  • 3/4 c
half and half (can use heavy cream or milk)

How to Make Roasted Garlic Mashed Red Potatoes

  1. Preheat oven to 425
Cut top off of garlic head, exposing each clove. Set in a piece of foil that's big enough to cover whole garlic head. Drizzle with olive oil and wrap up tightly. Roast in oven for 30-35 min. or until tender.
  2. While your garlic is roasting, wash and cube your potatoes. Put cubed potatoes in a large pot, cover potatoes with cold water, and salt. Bring to a boil and cook until fork tender.
  3. When your garlic is finished roasting, allow to cool for a few minutes. Then pop out each clove into a small bowl. Use the back of a wooden spoon to smash garlic into a paste.
  4. When the potatoes are ready, drain and transfer to medium bowl. In the same pot you boiled the potatoes in, combine butter and half & half over medium heat. Heat while stirring until butter is melted.
  5. Add warm butter/half & half, and garlic paste to potatoes and mash. I would start by adding only half of the butter/half&half mixture while mashing and add more to get to the consistency you prefer. Serve immediately. Enjoy!!
