A friend's husband gave me this recipe...he works in the oil field and they make them on the job. They are wonderful!

Ingredients
- 7 or 8 - lg potatoes (quartered)
- 2 - green or red peppers (sliced)
- 1 - onion (sliced)
- 1 - big block velveeta
- 1 stick butter (or enough to coat potatoes)
- - salt and pepper to taste
How To Make rig potatoes

Step 1Place quartered potatoes in a 9 X 13 pan, put in sliced bell peppers and onions, add about 1 cup of water (or enough to cover bottom of pan), salt and pepper and cover with foil and bake for about 1 hr or until done. When potatoes are done, add sliced velveeta on top and replace foil and let cheese melt.
