red wine roasted fingerling potatoes
It sounds like a lot of oil but it's not. The wine mostly evaporates and soaks into the potatoes gives them great flavor. The outsides end up crispy.

Ingredients
- 2 pounds fingerling potatoes
- 1/2 cup olive oil
- 1/2 cup dry red wine
- sea salt
- black pepper
- ground coriander
How To Make red wine roasted fingerling potatoes

Step 1Preheat oven 375 degrees. Wash the potatoes and put slits in them. Add the potatoes to a baking pan.

Step 2Pour the olive oil and red wine over the potatoes. Sprinkle with sea salt, pepper and ground coriander.

Step 3Bake for 1 hour turning the potatoes every 15 minutes.
