When I ask my husband if he wants potato salad, he says, "Yes, the good one." That means everything's better with bacon to him... It's so true. I don't have amounts of the mayo, parsley or cayenne pepper because it adjusts to amount your making and your taste preferences.

This red skinned potato salad with bacon is meant to serve a crowd. It's a cross between a German potato salad and a traditional potato salad. Cooking the celery and onions in the bacon grease adds a lot of savory flavor to the side dish. Not adding a ton of mayonnaise lets the bacon flavor shine.

Ingredients

  • 10 pounds red skinned potatoes, skins on
  • 1 pound bacon
  • 1 - extra large Vidalia onion
  • 5 stalks celery
  • 2 cups mayonnaise, more if needed
  • - parsley, to taste
  • 1/2 teaspoon cayenne pepper

We cut the recipe in half and used 5 pounds of potatoes, 1 large onion, 1 1/2 cups mayonnaise, and 1/2 tsp cayenne pepper.
  • Boil potatoes.
    Step 1
    Leave potatoes with skin on and place them in a pot with enough water to cover. Cook until done, about 20 - 25 minutes. Drain and let cool.
  • Chop the bacon.
    Step 2
    In the meantime, cut the bacon.
  • Dice onion and slice celery.
    Step 3
    Dice the onion and thinly slice the celery.
  • Fry the bacon.
    Step 4
    Start to cook the bacon.
  • Add onion and celery to the bacon.
    Step 5
    Once a little fat has rendered, add the onion and celery to it.
  • Cook until bacon is browned and veggie are cooked.
    Step 6
    Cook until the bacon is crisp and the veggies are soft.
  • Cube the potatoes.
    Step 7
    Once potatoes are cool enough to handle, cube them with the skins on.
  • Add veggie and bacon.
    Step 8
    Mix the bacon and veggies mixture with all of the drippings.
  • Stir in mayonnaise and parsley.
    Step 9
    While warm, add mayo and parsley. I start with 1 cup of mayonnaise and add a little at a time because it's not about the mayo, it's about the bacon flavor.
  • Add seasonings and more mayo if needed.
    Step 10
    Mix well. Add more mayo if needed. Add the cayenne pepper. Start with 1/2 tsp. Stir and taste. Add a little more of the ingredients to suit your taste.
