Ingredients

  • 2 pounds red potatoes scrubbed and quartered
  • 2 tablespoons oil
  • - salt and pepper
  • 3 tablespoons butter
  • 8 ounces fresh mushrooms chopped
  • 4 cloves garlic
  • 2 teaspoons fresh thyme leaves
  • 1 tablespoon miso paste
  • 1/4 cup white wine
  • 3/4 cup heavy cream
  • 1/2 cup parmigiano reggiano grated
  • - salt and pepper to taste

How To Make red potatoes in mushroom sauce

  • Step 1
    Preheat oven 425 degrees. Line a baking sheet with foil. Toss the potatoes with oil salt and pepper. Roast in oven for about 20 minutes stirring occasionally.
  • Step 2
    Meanwhile melt the butter in a saute pan and add the mushrooms let cook about 10 minutes. Add the garlic and miso paste. Cook for 1 minute add the white wine and let most evaporate. Add the heavy cream and cheese. Taste and adjust for salt and pepper. Sprinkle with the thyme.
  • Step 3
    Serve over the potatoes
