2 lb
red potatoes scrubbed and quartered
2 Tbsp
oil
salt and pepper
3 Tbsp
butter
8 oz
fresh mushrooms chopped
4 clove
garlic
2 tsp
fresh thyme leaves
1 Tbsp
miso paste
1/4 c
white wine
3/4 c
heavy cream
1/2 c
parmigiano reggiano grated
salt and pepper to taste

How to Make Red Potatoes in Mushroom Sauce

Step-by-Step

  • 1Preheat oven 425 degrees. Line a baking sheet with foil. Toss the potatoes with oil salt and pepper. Roast in oven for about 20 minutes stirring occasionally.
  • 2Meanwhile melt the butter in a saute pan and add the mushrooms let cook about 10 minutes. Add the garlic and miso paste. Cook for 1 minute add the white wine and let most evaporate. Add the heavy cream and cheese. Taste and adjust for salt and pepper. Sprinkle with the thyme.
  • 3Serve over the potatoes
