Ingredients
- 2 pounds red potatoes scrubbed and quartered
- 2 tablespoons oil
- - salt and pepper
- 3 tablespoons butter
- 8 ounces fresh mushrooms chopped
- 4 cloves garlic
- 2 teaspoons fresh thyme leaves
- 1 tablespoon miso paste
- 1/4 cup white wine
- 3/4 cup heavy cream
- 1/2 cup parmigiano reggiano grated
- - salt and pepper to taste
How To Make red potatoes in mushroom sauce

Step 1Preheat oven 425 degrees. Line a baking sheet with foil. Toss the potatoes with oil salt and pepper. Roast in oven for about 20 minutes stirring occasionally.

Step 2Meanwhile melt the butter in a saute pan and add the mushrooms let cook about 10 minutes. Add the garlic and miso paste. Cook for 1 minute add the white wine and let most evaporate. Add the heavy cream and cheese. Taste and adjust for salt and pepper. Sprinkle with the thyme.

Step 3Serve over the potatoes
