  • 2 lb
    red potatoes scrubbed and quartered
  • 2 Tbsp
  • ·
    salt and pepper
  • 3 Tbsp
  • 8 oz
    fresh mushrooms chopped
  • 4 clove
  • 2 tsp
    fresh thyme leaves
  • 1 Tbsp
    miso paste
  • 1/4 c
    white wine
  • 3/4 c
    heavy cream
  • 1/2 c
    parmigiano reggiano grated
  • ·
    salt and pepper to taste

How to Make Red Potatoes in Mushroom Sauce


  1. Preheat oven 425 degrees. Line a baking sheet with foil. Toss the potatoes with oil salt and pepper. Roast in oven for about 20 minutes stirring occasionally.
  2. Meanwhile melt the butter in a saute pan and add the mushrooms let cook about 10 minutes. Add the garlic and miso paste. Cook for 1 minute add the white wine and let most evaporate. Add the heavy cream and cheese. Taste and adjust for salt and pepper. Sprinkle with the thyme.
  3. Serve over the potatoes
