THIS IS THE POTATO SALAD THAT I MAKE FOR ALL GET TOGETHERS. IT IS LOADED WITH FLAVOR...THE PERFECT SIDE FOR ANY PLATE :)

Ingredients

  • 2 pounds washed n unpeeled cubed( 1-1/2 inch) red skinned potatoes
  • 5 - hard boiled eggs
  • 1/2 pound bacon, chpd.
  • 1 medium onion, finely chpd.
  • 1 - stalk of celery, finely chpd.
  • 1 1/2 cups mayo (can add more if u like)
  • 1 tablespoon mustard
  • 2 teaspoons chopped chives
  • - salt n pepper to taste

How To Make red potato salad

  • Step 1
    IN A LARGE POT OF SALTED BOILING. WATER COOK POTATOES FOR 15 MINUTES UNTIL TENDER. DRAIN N SET ASIDE TO COOL A BIT THEN REFRIGERATE TO FINISH COOLING PROCESS
  • Step 2
    IN SAUCEPAN COVER EGGS WITH COLD WATER N BRING TO A BOIL. COVER N REMOVE FROM HEAT LET SIT FOR 10 TO 15 MIN. REMOVE EGGS N PEEL N ROUGH CHOP EGGS.
  • Step 3
    FRY OUT CHPD.BACON THEN DRAIN.
  • Step 4
    REMOVE POTATOES FROM FRIDGE N ADD CHPD. EGGS, BACON, CELERY, ONION N CHIVES. IN A SMALL BOWL MIX MUSTARD WITH MAYO THEN POUR IN POTATO MIXTURE. SEASON WITH SALT N PEPPER. REFRIGERATE A FEW HOURS TO OVERNITE THEN......ENJOY:)
