Ingredients
- 2 pounds washed n unpeeled cubed( 1-1/2 inch) red skinned potatoes
- 5 - hard boiled eggs
- 1/2 pound bacon, chpd.
- 1 medium onion, finely chpd.
- 1 - stalk of celery, finely chpd.
- 1 1/2 cups mayo (can add more if u like)
- 1 tablespoon mustard
- 2 teaspoons chopped chives
- - salt n pepper to taste

Step 1IN A LARGE POT OF SALTED BOILING. WATER COOK POTATOES FOR 15 MINUTES UNTIL TENDER. DRAIN N SET ASIDE TO COOL A BIT THEN REFRIGERATE TO FINISH COOLING PROCESS

Step 2IN SAUCEPAN COVER EGGS WITH COLD WATER N BRING TO A BOIL. COVER N REMOVE FROM HEAT LET SIT FOR 10 TO 15 MIN. REMOVE EGGS N PEEL N ROUGH CHOP EGGS.

Step 3FRY OUT CHPD.BACON THEN DRAIN.

Step 4REMOVE POTATOES FROM FRIDGE N ADD CHPD. EGGS, BACON, CELERY, ONION N CHIVES. IN A SMALL BOWL MIX MUSTARD WITH MAYO THEN POUR IN POTATO MIXTURE. SEASON WITH SALT N PEPPER. REFRIGERATE A FEW HOURS TO OVERNITE THEN......ENJOY:)
