Great casserole with everything.and is pretty good alone with cornbread.

Ingredients

  • 5 pounds red potatoes
  • 1 large red onion
  • 2 cans cream mushroom soup
  • 1 can milk, use the soup can
  • 1 box mexican velveeta cheese ( med. box)
  • 1 stick butter
  • - salt/pepper/garlic

How To Make brandy's red eye potatoes

  • Step 1
    Peel potatoes and boil with all the onion till med soft.And drain well. Place in a 11x14 pan. Heat the 2 cans soup with 1 can of milk and 1 stick butter. Pour soup mixture over potatoes, season with salt, pepper, garlic. Cut veveeta in cubes and place over potatoes. Bake 350 for 45 min.
