really good stuffed sweet potatoes or yams

Cleaning out my cooking area of cook books and my old box of recipes and found this in the back of my recipe box where someone wrote this recipe on paper and gave to me. I remember making this years ago and loved them. My daughter-in-law makes them every Christmas. Maybe that's where I got this recipe. Getting forgetful at my age? NOTE: You can cook the patatoes in your microwave by pricking a wholes in the top with a fork and placing them on a paper towel and roll to wrap making sure the ends are folded under and cook for 10 or until done.

Ingredients

  • 6 medium yams or sweet potatoes
  • 1/4 cup butter, softened
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • dash pepper
  • 1/3 cup hot milk
  • 1 tablespoon ground cinnamon
  • 1/4 cup chopped walnuts
  • - marshmellows if desired

How To Make really good stuffed sweet potatoes or yams

  • Step 1
    Scrub and wash potatoes
  • Step 2
    Preheat oven to 425
  • Step 3
    Place yams/sweet potatoes on a cookie sheet covered with non- stick heavy duty foil. Bake for 40 minutes or until done.
  • Step 4
    Remove from oven and set aside to cool enough to handle. Lower oven to 350
  • Step 5
    Carefully slice the top off of each yam/sweet potato.
  • Step 6
    Scoop out inside, being careful not to break shell into a large mixing bowl. Place milk in a sauce pan and heat milk just to hot stage.
  • Step 7
    Add butter, brown sugar, salt, pepper,cinnamon and enough hot milk to moisten the yams/sweet potatoes.
  • Step 8
    Beat with electric mixer until fluffy.
  • Step 9
    Fold in chopped nuts.
  • Step 10
    Pile mixter lightly into yam/sweet potato shells again, being careful not to break the shell.
  • Step 11
    * If desired; place two marshmellows cut in half and a walnut half on top of each potato
  • Step 12
    Place all yam/sweet potato on cookie sheet lined with non-stick heavy duty foil and return to oven and bake for 15 to 20 minutes or until hot through or marshmellows are soft and brown.
