These potatoes are so darn good, you will want to make them often! I added bacon, but you could also add chopped onion while cooking the potatoes...both are great options! Enjoy!

  • 7 medium
    potatoes, cut into 1/2 inch cubes
  • 1/4 c
    butter, cubed
  • 8 oz
    sour cream
  • 1
    envelope ranch salad dressing mix
  • 4 oz
    shredded cheddar
  • 1 bag(s)
    bacon bits
  • 1 small
    onion, chopped (add to potatoes when baking if you want, it is optional)

How to Make Ranch Potato Cubes


  1. Place potatoes in a greased 11x7, dot with butter. Cover and bake at 325 degrees for 60-65 min or until tender. Combine sour cream and salad dressing mix; spoon over the potatoes. Sprinkle with bacon bits (the soft ones, not bacos). Sprinkle with cheese. Bake, uncovered for 5-10 minutes or until cheese is melted.
