  • 6 large russet potatoes
  • 1 pound breakfast sausage, hot or mild
  • 1 pound velveeta cheese, cubed
  • 1 can 10-oz. can mild rotel tomatoes and green chilies, drained well

How To Make queso stuffed baked potatoes

  • Step 1
    Bake potatoes in oven for 1 hr. at 400 degrees F.
  • Step 2
    Meanwhile, in a large skillet brown the sausage and drain on paper towels. Return sausage to the skillet and add cheese - heat on low-medium heat until cheese melts.
  • Step 3
    Once cheese is melted, add rotel and heat until mixture is well mixed and hot.
  • Step 4
    Cut slits in baked potatoes and squeeze gently to open. Spoon queso over baked potatoes.
