- 6 large russet potatoes
- 1 pound breakfast sausage, hot or mild
- 1 pound velveeta cheese, cubed
- 1 can 10-oz. can mild rotel tomatoes and green chilies, drained well
How To Make queso stuffed baked potatoes

Step 1Bake potatoes in oven for 1 hr. at 400 degrees F.

Step 2Meanwhile, in a large skillet brown the sausage and drain on paper towels. Return sausage to the skillet and add cheese - heat on low-medium heat until cheese melts.

Step 3Once cheese is melted, add rotel and heat until mixture is well mixed and hot.

Step 4Cut slits in baked potatoes and squeeze gently to open. Spoon queso over baked potatoes.
