- 1 pound potatoes, thinly sliced
- 3 large sprigs of thyme or rosemary, finely chopped
- 1 pound pumpkin, thinly sliced
- 1 large garlic clove, crushed
- 2 cups thick heavy cream

Step 1Preheat the oven to 375 F. Lightly grease a 10x9" pan with a little butter. Arrange a layer of potato in the dish, season with salt, pepper and herbs, then top with a layer of pumpkin. Continue the layers, finishing the pumpkin. Mix the garlic with the cream and pour over the top. Cover the dish with buttered foil and bake in the oven for about 45 minutes.

Step 2Test to see if the gratin is cooked by inserting a knife into the centre. If the slices seem soft, it is cooked. Remove the foil and increase the oven temperature to 375 F. Cook for another 15 minutes, or until there is a good brown crust on top. Leave to rest for at least 10 minutes before serving. This dish can be served as the main dish, or with salad, or just on it's own. It is delicious anyway you scoop it.
