potluck mashed potatoes
This is a great "make ahead" recipe. It can be prepared the day before and refridgerated then baked the day of. They are so creamy and good.

Ingredients
- 5 pounds potatoes, peeled and quartered
- 1 cup sour cream
- 8 ounces cream cheese, room temperature
- 6 tablespoons butter, divided
- 2 tablespoons dried minced onion
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
How To Make potluck mashed potatoes

Step 1Boil potatoes until done. Drain and place in large bowl. Mash the potatoes. Add the sour cream, cream cheese, 4 T. butter, dried minced onion, salt and pepper and beat until smooth and creamy. Spread potato mixture in a greased large baking dish. Drizzle 2 T. melted butter over the top and sprinkle with paprika. Cover and bake at 350 degrees for 45 minutes; uncover and bake additional 20 minutes.

Step 2May be made ahead and refridgerated. If made ahead and refridgerated, let stand at room tempperature for 25-30 minutes before baking.
