Ingredients
- olive oil
- 1/2 red onion finely diced
- 2 cloves garlic minced
- 1 tablespoon spoked paprika
- 1 cup mayonnaise
- 1/4 tube each hot sauce and sherry vinegar
- salt and pepper
- 4 russet potatoes peeled and cubed
- fresh parsley to garnish
How To Make potatoes with spicy aioli

Step 1To make the Aioli Add one tbsp olive oil to a saute pan and add the onion and garlic and cook about 5 minutes. Add the paprika and cook 30 seconds. Let cool.

Step 2Place the onion mixture, mayo, hot sauce, sherry, salt and pepper in a food processor and process until smooth. Place in the refrigerator for 1/2 hour.

Step 3Place the cubed potatoes in salted boiling water and cook 5 minutes. Drain and set aside on paper towel to dry.

Step 4Place a baking sheet in the oven at 375 degrees.

Step 5Fill a skillet about 2 inches deep with oil. Fry the potatoes until golden on all sides. Remove the baking sheet from the oven and arrange the potatoes in a single layer. Season with salt and pepper. Roast in oven about 10 minutes.

Step 6Serve drizzled with aioli and garnish with parsley
