Ingredients

  • 1/2 cup roasted peanuts, peeled
  • 1/2 cup skim milk
  • 1 teaspoon canola oil
  • 1/4 cup onion, chopped (white or yellow)
  • 1 garlic clove, minced
  • 1 tablespoon red bell pepper, finely chopped
  • 1/2 cup chicken broth, defatted
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/8 teaspoon annatto powder
  • 1 pound red potatoes, peeled, sliced or cubed, cooked
  • lettuce leaves
  • 1 teaspoon fresh cilantro, chopped
  • 5 teaspoons peanuts, chopped, for garnish

How To Make potatoes with peanut sauce

  • Step 1
    In a blender or food processor, blend peanuts and milk until smooth.
  • Step 2
    Heat oil in a non-stick skillet over medium-high heat. Saute onion, garlic, and pepper for 1-2 minutes. Stir in chicken broth, peanut sauce, salt, and pepper.
  • Step 3
    Cook over medium-low heat until sauce thickens, about 8-10 minutes. Add the potatoes and toss gently.
  • Step 4
    Serve over lettuce leaves. Sprinkle each serving with cilantro and chopped peanuts.
