Ingredients
- 1/2 cup roasted peanuts, peeled
- 1/2 cup skim milk
- 1 teaspoon canola oil
- 1/4 cup onion, chopped (white or yellow)
- 1 garlic clove, minced
- 1 tablespoon red bell pepper, finely chopped
- 1/2 cup chicken broth, defatted
- 1/4 teaspoon salt
- 1/4 teaspoon ground white pepper
- 1/8 teaspoon annatto powder
- 1 pound red potatoes, peeled, sliced or cubed, cooked
- lettuce leaves
- 1 teaspoon fresh cilantro, chopped
- 5 teaspoons peanuts, chopped, for garnish
How To Make potatoes with peanut sauce

Step 1In a blender or food processor, blend peanuts and milk until smooth.

Step 2Heat oil in a non-stick skillet over medium-high heat. Saute onion, garlic, and pepper for 1-2 minutes. Stir in chicken broth, peanut sauce, salt, and pepper.

Step 3Cook over medium-low heat until sauce thickens, about 8-10 minutes. Add the potatoes and toss gently.

Step 4Serve over lettuce leaves. Sprinkle each serving with cilantro and chopped peanuts.
