This is a great cheesy side that would please any meat-and-potatoes lover.

Ingredients

  • 2 pounds yukon gold potatoes, peeled and washed
  • salt
  • olive oil
  • 1/2 pound shredded Raclette cheese

How To Make potatoes with melted raclette cheese

  • Step 1
    Place the potatoes whole in cold salted water. Bring to a boil and let cook about 15 to 20 minutes. Until fork-tender but not falling apart.
  • Step 2
    Let cool, then cut into 1/2 inch slices.
  • Step 3
    Lay on a baking sheet and drizzle with olive oil, and add salt. Place under the broiler at high heat until browned a bit.
  • Step 4
    Remove from the oven and top with the cheese.
  • Step 5
    Place under the broiler again until the cheese is melted and browned a bit.
