Ingredients

  • 1 - medium zucchini, thinly sliced
  • 2 tablespoons butter
  • 6 large potatoes, boiled, skinned
  • 4 tablespoons olive oil
  • 6 slices bacon
  • - salt and pepper to taste

How To Make potatoes with bacon & zucchini

  • Step 1
    In a skillet, fry the bacon until almost crisp.
  • Step 2
    Drain most of the fat.
  • Step 3
    Chop the bacon and return to pan.
  • Step 4
    Add sliced zucchini, butter and oil.
  • Step 5
    Saute until slightly soft.
  • Step 6
    In a large serving bowl, slice the potatoes about 1/2\" thick.
  • Step 7
    Add bacon-veggie mixture, salt and freshly ground pepper and mix well.
  • Step 8
    Serve hot or warm.
  • Step 9
    *You may also use sliced onions in this recipe and add them with the zucchini.
