Ingredients

  • 4 medium baking potatoes
  • 1/2 cup butter
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dill weed
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon chives, dried
  • 1/2 cup parmesan cheese
  • 1 cup sour cream
  • 1 - 10 oz. packages frozen spinach, chopped

How To Make potatoes w/ spinach stuffing

  • Step 1
    Thaw spinach & drain squeeing out all liquid.
  • Step 2
    Bake potatoes at 400 degrees F for 1 hour. Cut potatoes in 1/2 & scoop out; reserve shells.
  • Step 3
    Mix remaining ingredients except spinach & cheese together with potato; fold in spinach.
  • Step 4
    Stuff the potato shells with spinach/potato mixture. Sprinkle cheese on top of each potato & bake at 350 degrees F. for 20 - 25 minutes.
