Ingredients
- 5-6 medium potatoes, diced
- 6-7 large eggs
- 1-2 medium onions, if desired
- - salt/pepper/garlic powder to taste
- 1/3 cup cheese, parmasean
How To Make potatoes and eggs

Step 1peel and dice potatoes into bite size cubes. (may leave skin if desired)

Step 2rinse potatoes and fry in skillet with EVOO over medium heat till semi done.

Step 3peel and cut onion into strips, add to skillet and cook till tender.

Step 4scramble eggs and add to skillet; mix well with potatoes and onions.

Step 5add S/P/G and parm. cheese and mix well.

Step 6Serve as main dish for breakfast or as a side dish. Goes well with steak!
