How to Make Potatoes and Eggs
- 1peel and dice potatoes into bite size cubes. (may leave skin if desired)
- 2rinse potatoes and fry in skillet with EVOO over medium heat till semi done.
- 3peel and cut onion into strips, add to skillet and cook till tender.
- 4scramble eggs and add to skillet; mix well with potatoes and onions.
- 5add S/P/G and parm. cheese and mix well.
- 6Serve as main dish for breakfast or as a side dish. Goes well with steak!
