How to Make Potatoes and Eggs
- peel and dice potatoes into bite size cubes. (may leave skin if desired)
- rinse potatoes and fry in skillet with EVOO over medium heat till semi done.
- peel and cut onion into strips, add to skillet and cook till tender.
- scramble eggs and add to skillet; mix well with potatoes and onions.
- add S/P/G and parm. cheese and mix well.
- Serve as main dish for breakfast or as a side dish. Goes well with steak!
