This is my mothers potato salad. The only thing I have changed is I chop the egg and mix it in , my mother always just garnished the top of hers with the egg slices, and we would fight over them so I now make it mixed in.

Ingredients

  • 5 pounds potatoes boiled, peeled and, diced
  • 1/2 - green bell pepper diced
  • 2 - thinnly sliced celery stalks
  • 1/2 - onion diced
  • 6 - hard boiled eggs diced
  • 1 (30oz) jar helmans mayonaise
  • 3 tablespoons white vinegar
  • 3 teaspoons yellow mustard
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

How To Make potatoe salad

  • Step 1
    put potatoes in a large pot, cover with water and put to boil. cook until tender, drain, let potatoes cool and then peel and dice, and put in a large bowl.
  • Step 2
    boil the eggs, then peel and dice.
  • Step 3
    dice green pepper, onion, and celery, set aside.
  • Step 4
    in a small mixing bowl put mayonnaise. add 3tbs of sugar , 1 tsp salt, 1/2 tsp pepper, 3tbs vinegar, 3 tsp yellow mustard. mix this well here is where I taste it to adjust and add anything I think it might need more of. It should taste a little tangy sweet, not sour.
  • Step 5
    mix peppers, onion ,eggs and celery with potatoes, and then pour mayonnaise dressing over it and mix well, refrigerate several hours, or over night.
  • Step 6
    you can garnish with slices of egg and sprinkle with parsley or paprika to garnish.
