Potato Vegetable pancakes

4 mediumpotatoe peeled and graded

1 largeegg

1/3 cflour
-
1 mediumsummer squash grade just the yellow

1 mediumzucchini grade just the green
-
1 largeonion mined
-
2 Tbspbutter melted

5 mediumscallions chopped
-
1 bunchparsley chopped fine
How to Make Potato Vegetable pancakes
- Mix all ingredients in a bowl.
- Use a 3 ounce ice cream scoop to portion each potato pancake and cook on each side untl done.
- Serve with sour cream and apple sauce.
