Ingredients

  • 3 cups potatoes, shredded
  • 1.25 cups zucchini, shredded
  • 1 cup carrots, shredded
  • 1 - medium onion, grated
  • 3 - eggs, beaten
  • 1/4 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon rosemary, dried
  • - canola oil

How To Make potato vegetable latkes

  • Step 1
    Squeeze shredded vegetables dry.
  • Step 2
    Blend with remaining ingredients.
  • Step 3
    Fry in minimum amount of oil, 2 tablespoons per cake.
  • Step 4
    Serve with sour cream and/or applesauce.
