potato stacks

We eat alot of potatoes and I was trying to come up with something new to do with them, this is what I came up with. I really don't have exact measurements so I tried to guess. My husband and I really enjoyed them.

Ingredients

  • 3 - potatoes, peeled and sliced 1/2
  • 4-5 slices bacon, cooked and chopped
  • 1 cup cheese, any kind, shredded
  • - salt and pepper to taste
  • - pickled jalapeno slices
  • 1/2 stick melted butter or margarine
  • - paprika

How To Make potato stacks

  • Step 1
    Brush both sides of potatoes with melted butter, salt and pepper both sides of potatoes. Place on baking sheet, bake at 400 degrees until potatoes are tender, or you can grill the potatoes. When potatoes are done cover the top of each potato with bacon pieces, 1 slice jalapeno, top with cheese, place back in oven to melt the cheese. Sprinkle with paprika before serving. Serve with ranch dressing.
