This is for those of us that can't eat the skins (Crohn's Disease), but still want to enjoy the taste of Potato Skins!

Ingredients

  • 8 large baking potatoes
  • 1 cup butter
  • 8 cloves garlic, minced
  • - salt & pepper, to taste
  • 1 cup cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • - sour cream
  • 6 - 8 - green onions, sliced thin
  • 8 slices bacon, cooked crisp & crumbled
  • - chives, dried

How To Make potato skins with out the skins

  • Step 1
    Do the potato this way...https://www.justapinch.com/recipes/side/potatoes/how-to-peel-a-potato-mary.html?p=1 & then refrigerate overnight. NOTE: This will harden the starch to complete the recipe appropriately.
  • Step 2
    Melt butter over medium heat. When the butter is hot add the garlic. Saute the garlic until softened & fragrant (about 2 1/2 minutes).
  • Step 3
    Preheat oven to 350 degrees F.
  • Step 4
    Meanwhile, take potatoes out of refrigerator & slice in 1/2 widthwise & again lengthwise (you should have 4 pieces.
  • Step 5
    Place each potato piece on a shallow baking sheet. Spread garlic butter mixture on top. Sprinkle with salt & pepper.
  • Step 6
    In a small bowl, combine both cheese & toss to mix together.
  • Step 7
    Spread cheese mixture lightly on top of the buttered skins. Place the cookie sheet in the upper third rack of the oven. Bake the potatoes, about 30 minutes or until hot, crisp & golden.
  • Step 8
    When out...place a dollap of sour cream & sprinkle green onion, bacon & chives on each potato piece. Enjoy!
