potato skins
Had this at a church party and they are fabulous. Got the recipe from a fellow soprano. Delicious!!

12-16 , depending on number of potatoes you start with....
Ingredients
- 10-12 - small redskin potatoes
- 1 cup shredded mozzarella
- 1 cup shredded sharp cheddar
- 1/2 cup parmesan cheese
- 1/2 cup mayo
- 1 bag kroger bacon bits
- - seasoning salt and white pepper, to taste
How To Make potato skins

Step 1Boil potatoes with skin on til done. Cut in half and scoop out with melon baller. I leave a fair amount of potato in the skin. ( you can use the part scooped out for mashed potatoes or whatever you want.)

Step 2Combine mozzarella, sharp and parmesan chesses with the mayo, salt and pepper.

Step 3Stuff the shells evenly and sprinkle with bacon bits. Bake in preheated 350 oven for 20-30 minutes
