Had this at a church party and they are fabulous. Got the recipe from a fellow soprano. Delicious!!

12-16, depending on number of potatoes you start with....

  • 10-12
    small redskin potatoes
  • 1 c
    shredded mozzarella
  • 1 c
    shredded sharp cheddar
  • 1/2 c
    parmesan cheese
  • 1/2 c
  • 1 bag(s)
    kroger bacon bits
  • ·
    seasoning salt and white pepper, to taste

How to Make Potato Skins


  1. Boil potatoes with skin on til done. Cut in half and scoop out with melon baller. I leave a fair amount of potato in the skin. ( you can use the part scooped out for mashed potatoes or whatever you want.)
  2. Combine mozzarella, sharp and parmesan chesses with the mayo, salt and pepper.
  3. Stuff the shells evenly and sprinkle with bacon bits. Bake in preheated 350 oven for 20-30 minutes
