potato salad with a crunch
Found this recipe in a cookbook called "Serving with Faith" which was a gift to me years ago. The book has recipes/menues from many individuals serving Greer Community Ministries and its senior citizens in Greenville County SC. I will share from time to time the many good recipes.

Ingredients
- 2 medium potatoes, peeled and diced
- 1 can delmonte mixed vegetables, drained
- 1 medium onion, chopped fine
- 2 medium apples, red delicious, pelled and diced
- 2 tablespoons sweet salad cube pickles
- 2 tablespoons vinegar
- 1/2 cup mayonnaise
How To Make potato salad with a crunch

Step 1Cook and drain potatoes. Mix with vegetables, onion, apples and salad cubes. Mix vinegar and mayonnaise together. Toss with potato mixture. Serve on lettuce.
