Found this recipe in a cookbook called "Serving with Faith" which was a gift to me years ago. The book has recipes/menues from many individuals serving Greer Community Ministries and its senior citizens in Greenville County SC. I will share from time to time the many good recipes.

Ingredients

  • 2 medium potatoes, peeled and diced
  • 1 can delmonte mixed vegetables, drained
  • 1 medium onion, chopped fine
  • 2 medium apples, red delicious, pelled and diced
  • 2 tablespoons sweet salad cube pickles
  • 2 tablespoons vinegar
  • 1/2 cup mayonnaise

How To Make potato salad with a crunch

  • Step 1
    Cook and drain potatoes. Mix with vegetables, onion, apples and salad cubes. Mix vinegar and mayonnaise together. Toss with potato mixture. Serve on lettuce.
