Ingredients
- 2 pounds unpeeled red potatoes
- 3 - chopped green onions
- 1/2 pound bacon, cooked, crumbled
- 1 - green bell pepper, diced
- 1 large hard-boiled egg, chopped
- 1/2 cup light sour cream
- 1/4 cup fat-free milk
- 3 tablespoons chopped fresh dill
- 1 tablespoon lemon juice
- 2 teaspoons dijon mustard
- 1/2 teaspoon salt
How To Make potato salad w/ bacon, egg and dill

Step 1Slice potatoes into 1/4"-thick slices. Place potato slices in lg saucepan and cover w/ water. Bring to a boil. Cover, reduce heat and simmer 15 mins. Drain, cool.

Step 2In lg bowl, combine potatoes, green onions, bacon, green bell pepper, and egg. Toss gently. In another bowl, whisk together sour cream, milk, dill, lemon juice, mustard and salt.

Step 3Pour dressing over potato mix. Toss gently to coat. Cover and chill until ready to serve.
