Pizza for breakfast? I love potatoes in every shape, color and form. This pizza is no exception. It is a very non-traditional pizza but potato lovers will thank you for it.

  • 3 large potatoes, peeled and cubed
  • 1 - tube pizza refrigerated dough or pizza dough or your choice
  • 1/4 cup milk
  • 1/2 teaspoon kosher salt
  • 1 pound bacon, diced
  • 1 large onion, chopped
  • 1/2 cup red bell pepper, chopped
  • 1 1/2 cups mozzarella cheese
  • 1 1/2 cups monterey jack cheese
  • 4 large eggs
  • 1/4 cup freshly parsley, chopped
  • - sour cream for topping, optional

How To Make potato pizza for breakfast

  • Step 1
Place potatoes in a saucepan and cover with water. Bring to a boil and cook for 20 minutes or til tender. Meanwhile, unroll the pizza crust onto an ungreased (14 inch) pizza pan; flatten dough and build up edges slightly. Prick dough several times with a fork. Bake 350° for 15 minutes or til lightly browned. Cool on a wire rack.
  • Step 2
Drain potatoes and transfer to a mixing bowl. Mash with milk and salt until smooth. Spread over crust. In a skillet, partially cook the bacon. Add onion and red pepper; cook til bacon is crisp and vegetables are tender.
  • Step 3
Drain well; sprinkle over potatoes. Top with cheeses, leaving a divot for each egg. Place an egg in each divot. Bake 500° for 8 minutes or until is cooked to your liking. Sprinkle with parsley and serve with sour cream if desired.
  • Step 4
When I make my own crust I make individual pizzas for everyone.
