Another great Potato Pancake I created this morning. Great for breakfast, lunch or dinner.

Ingredients
- 1 1/2 pounds russet potatoes, peeled, shredded and placed in cold water
- 3 - green onions, sliced
- 2 - eggs
- 1/2 cup milk
- 3 - 4 tablespoons flour
- salt - & pepper to taste
- oil - for frying
How To Make ~ potato pancakes ~ cassies

Step 1In a medium bowl, beat eggs, add milk and whisk in flour. Add seasoning and onions. Place potatoes in tea towel and wring out as mush water as possible. Stir potatoes into egg mixture.

Step 2In a cast iron skillet, heat enough oil to lightly cover bottom of skillet. Hot but not smoking.

Step 3Drop 1/4 cupfuls of potato mixture into the hot oil and cook 2 - 3 minutes on each side, or to desired crispiness. Drain on paper towel. Immediately season if preferred.
