Ingredients
- 2 1/2 cups mashed potatoes
- 3 - eggs
- 1/4 cup green onions
- 1 tablespoon vegetable oil
How To Make potato pancakes

Step 1I use leftover mashed potatoes that I have in the fridge. Usually it's about 2-3 cups worth. I heat them in the microwave just enough to soften them up so they're easier to mix up with the eggs

Step 2while the potatoes are heating up beat 3 eggs together in a medium sized bowl.

Step 3Heat vegetable oil in large frying pan. Mix potatoes with eggs until well blended. Toss chopped green onions in and mix.

Step 4Using a 1/4 cup size measuring cup drop potato mixture onto hot frying pan. Cook over medium heat and when edges turn crisp and golden flip. Cook a few more minutes on other side until golden and serve.
