potato pancakes

This is a recipe that my moms mother pasted down to her and she passed it on to me. The funny part is my mom always said I made them better than she did. Keep in mind the more potatoes used the more pancakes it will make.

Ingredients
- 6 large potatoes
- 4 teaspoons salt
- 3 teaspoons pepper
- 2 large eggs
- 2 cups all purpose flour(it may vary add flour till pancake consistancy)
- 2 teaspoons cooking oil
How To Make potato pancakes

Step 1Pleel and wash potatoes grate potatoes into large bowl add salt, pepper, eggs. Mix, then add flour a little at a time until batter reaches right consistancy. Your flour amount may change depending on how many patatoes you use. Stir all together until well mixed. Add oil to griddle let get hot then add first pancake spread some with back of spoon so fairly thin fry on first side till golden brown then flip and fry second side till brown. Remove from griddle put on plate. We just add butter and eat but some like syurp while others like catsup on top.
