My mom always made potato pancakes on Friday's in lent, here is my simple but tasty version.

Ingredients
- 6 - potatoes shredded
- 1 - onion finely chopped
- 1 teaspoon seasoned salt
- 2 - eggs
- 1 cup flour, may need a little more if the mix is wet
- - canola oil
- - sour cream
How To Make potato pancake

Step 1Peel the potatoes and shred them in a food processor.

Step 2Peel the onion and finely chop in the food processor

Step 3In a bowl mix the shredded potatoes, onion seasoned salt, eggs and flour.

Step 4Make pancakes shapes out of the mixture

Step 5Fry the pancake in the oil until golden brown, drain on a paper towel.

Step 6Serve with the sour cream for dipping.
