My mom always made potato pancakes on Friday's in lent, here is my simple but tasty version.

Ingredients

  • 6 - potatoes shredded
  • 1 - onion finely chopped
  • 1 teaspoon seasoned salt
  • 2 - eggs
  • 1 cup flour, may need a little more if the mix is wet
  • - canola oil
  • - sour cream

How To Make potato pancake

  • Step 1
    Peel the potatoes and shred them in a food processor.
  • Step 2
    Peel the onion and finely chop in the food processor
  • Step 3
    In a bowl mix the shredded potatoes, onion seasoned salt, eggs and flour.
  • Step 4
    Make pancakes shapes out of the mixture
  • Step 5
    Fry the pancake in the oil until golden brown, drain on a paper towel.
  • Step 6
    Serve with the sour cream for dipping.
