These are a little spicy but very yummy. They aren't difficult to make either.

  • 8
    medium potatoes
  • 1 pkg
    hidden valley spicy ranch dressing mix
  • 1 jar(s)
    (12 oz.) sliced jalapeno peppers
  • 2 c
    cheddar cheese, shredded
  • 2 c
    monterey jack cheese, shredded
  • 2 c
    sour cream
  • 6 -8
    green onions, chopped

How to Make Potato Nachos


  1. Place whole potatoes (red or regular doesn't matter what kind) in a pot and cover with water. Boil 15 - 20 minutes or just until tender.
  2. Drain poatoes; cool slightly.
  3. Cut potatoes into 1/4" thick slices.
  4. Place in a single layer on greased cookies sheets. Top each with salad dressing mix, a jalapeno slice, cheddar and monterey jack cheeses.
  5. Bake uncovered 10 - 12 minutes or until the cheese is melted.
  6. Top with sour cream and green onion.
