potato kugel
I love ethnic foods and kugel is one of my favorites. It's a Jewish casserole dish. There's also a noodle kugel which is very good. There are so many variations to these dishes. Feel free to add veggies, if you like... carrots, zucchini, etc.

Kugel is commonly served on Jewish holidays and Shabbat. This potato kugel recipe is similar to a hash brown casserole but made with simpler ingredients. It's a delicious side to any meal with a soft potato center and a crunchy top.

Ingredients
- 6 large eggs
- 1/2 cup oil
- 4 tablespoons all-purpose flour
- 1 tablespoon (heaping) salt
- 1/2 teaspoon pepper
- 8 medium Russet potatoes, peeled
- 2 medium onions
How To Make potato kugel

Step 1Preheat oven to 400 degrees F. Grease a 9 x 13-inch baking dish.

Step 2In a large bowl, mix eggs, oil, flour, salt, and pepper. Set aside.

Step 3Coarsely grate the potatoes and onion by hand or with a food processor. Let stand for 3-5 minutes. Squeeze out the excess liquid.

Step 4Add the potatoes and onion to the egg mixture. Mix by hand.

Step 5Pour mixture into the greased baking dish. Spread the mixture as evenly as possible.

Step 6Bake, uncovered, for 1 hour or until golden brown on top and a knife inserted in the middle comes out clean.
