This recipe and photo came from Tasteofhome.com as part of their holiday menu for Hanukkah. I celebrated Hanukkah a couple years ago with my boyfriend's family and their food was all so delicious. This dish is especially yummy!

Ingredients
- 2 - eggs
- 1/4 cup matzo meal
- 2 teaspoons kosher salt
- 1 dash pepper
- 6 large potatoes, peeled
- 1 large onion, cut into 6 wedges
- 1/4 cup canola oil
How To Make potato kugel

Step 1In a large bowl, whisk the eggs, matzo meal, salt and pepper.

Step 2In a food processor fitted with the grating attachment, alternately grate potatoes and onion. (The secret to keeping potatoes white is to switch off between potatoes and onions when grating.) Add to the egg mixture; toss to coat.

Step 3In a small saucepan, heat the oil over medium heat until warmed. Stir into potato mixture.

Step 4Transfer potato mixture to a greased 13x9-inch baking pan. Bake in a preheated 375-degree oven for 40-50 minutes or until golden brown. Serve with sour cream, if desired.
