I remember helping Grandma make these fantastic little potato gnocchi in her kitchen. They are easy, and incredibly good!

Ingredients For potato gnocchi, grandma w

  • 1 lb
    potatoes, pared and quartered
  • 2 Tbsp
    margarine
  • 1
    egg, well beaten
  • 1 c
    flour
  • 1/4 tsp
    salt
  • dash
    pepper
  • 1/4 c
    melted butter
  • 1/3 c
    grated parmesan

How To Make potato gnocchi, grandma w

  • 1
    Cook, drain and mash potatoes. Beat in butter and egg. Add flour, salt and pepper. Knead to a dough, adding flour if sticky. Divide into four pieces. Roll each on lightly floured surface into a cylinder 1/2 inch thick. Cut into 1" pieces. Drop one by one into gently boiling water. Cook about 3 min or until they come to the surface. Remove with slotted spoon to shallow oven dish. Drizzle with 1/4 c margarine and sprinkle with cheese. Broil to heat and melt cheese.
