Ingredients
- 4 - medium size potatoes peeled, and coarsly grated and squeezed in a kitchen towel to dry
- 5 tablespoons flour
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 - large eggs, lightly beaten
- 2 tablespoons vegetable oil
How To Make potato fritters

Step 1In a bowl, combine well the potatoes, flour , salt, pepper. Stir in the eggs and the 2 tabelspoons vegetable oil, mixing thoroughly.

Step 2In a frying pan, heat 1/2 inch of oil. It is hot enough when a small amount of the mixture dropped into the oil will instantly sizzles. Drop heaping teaspoonful of the mixture into the hot oil. DO NOT CROWD .

Step 3Taste one of the first fritters for seasoning. Stir mixture each time before dropping into the oil. When the bottoms of the fritters are crisply golden, turn and brown the other side. Drain on paper towels and serve immediately.
