This was one of my mother in laws signature dishes, it is a great way to use those leftover mashed potatoes

Ingredients

3 cups leftover mashed potatoes
1/4 cup diced onion
2 - eggs
- bread crumbs, seasoned
- vegetable oil for frying

How To Make potato croquettes

Step 1

mix cold mashed potatoes with onions

Step 2

using a fork beat eggs with 1/4 cup water to make an egg wash
Step 3

form potato mixture into egg shaped croquettes, dip into egg wash then into bread crumbs to coat.
Step 4

heat vegetable oil in frying pan and fry on medium heat till browned and crispy.
