potato-corn fritters

I had a little bit of mashed potatoes left from the night before and couldn't deside if I wanted corn fritters or potato pancakes, so I combined them. Boy were they good.

Ingredients

  • 1 can cream corn
  • 1 cup mashed potato (stiff either fresh made or leftover)
  • 1 large egg
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • - salt and fresh ground pepper to taste

How To Make potato-corn fritters

  • Step 1
    In a bowl combine all the ingredients and drop by table spoon fulls into a hot well oiled frying pan, cook until done flipping half way through. Serve with either butter salt and pepper like I like them or with maple syrup like Eric likes them.
