potato chip casserole

I had this at a recipe club a few years back and it was YUMMY GOOD! Goes great with filet mignon. I made it for a large family holiday gathering and they have requested it again this year. Even the kids loved it. I'm adding it to JustAPinch to share it with the members but also so I can use the wonderful grocery list feature to print out everything I need for all the recipes I'm making for the holidays! Ingredients
- 1/2 cup chopped onion or use french fried onions
- 1 pint sour cream
- 1 can condensed cream of chicken soup (or any soup you like)
- 2 cups shredded cheddar cheese (or any cheese you like)
- 2 pounds shredded potatoes or hash browns, frozen (thawed), refrigerated or fresh
- - salt and pepper to taste
- 2 cups crushed potato chips (can use corn flakes, or french fried onions or whatever you like)
- 1/2 cup butter, melted (more or less you if like)
How To Make potato chip casserole

Step 1Preheat oven to 350 degrees

Step 2In a large mixing bowl combine the onion, sour cream, soup, cheese, salt and pepper. Note: If the potatoes are watery, press out the water. Add potatoes to the soup mixture.

Step 3Transfer to 9 by 12 pan Sprinkle potato chips on top and drizzle with butter. Bake for 45 to 60 minutes until golden brown.
