I got this recipe from a friend years ago, and every time I take it anywhere, someone always asks me for the recipe. I guessed on the prep time, as I don't peel potatoes very fast! It's very easy to make and is a crowd-pleaser in my opinion! Adjustments and/or changes are welcome.

sliced bacon
medium potatoes, peeled & diced
1 lb
velveeta cheese, cubed (original)
1 c
hellman's mayonnaise
1/2 c
chopped onion (reconstituted ok)
1/2 tsp
pepper to taste

How to Make Potato, Cheese & Bacon Casserole


  • 1Cook potatoes, about 10 minutes on high. Drain & put back in pan.
  • 2While cooking potatoes, fry (or nuke, less greasy!) bacon until almost done, still a little limp - cool.
  • 3Combine potatoes, cheese, mayo, onion, salt & pepper.
  • 4Spoon into 9x13 glass baking dish, sprayed with non-stick cooking spray. Crumble and sprinkle bacon on top.
  • 5Bake, uncovered, at 350 degrees for 1 hour, or until heated through.
