potato, cheese & bacon casserole

I got this recipe from a friend years ago, and every time I take it anywhere, someone always asks me for the recipe. I guessed on the prep time, as I don't peel potatoes very fast! It's very easy to make and is a crowd-pleaser in my opinion! Adjustments and/or changes are welcome.

Ingredients
- 1 pound sliced bacon
- 8 - medium potatoes, peeled & diced
- 1 pound velveeta cheese, cubed (original)
- 1 cup hellman's mayonnaise
- 1/2 cup chopped onion (reconstituted ok)
- 1/2 teaspoon salt
- - pepper to taste
How To Make potato, cheese & bacon casserole

Step 1Cook potatoes, about 10 minutes on high. Drain & put back in pan.

Step 2While cooking potatoes, fry (or nuke, less greasy!) bacon until almost done, still a little limp - cool.

Step 3Combine potatoes, cheese, mayo, onion, salt & pepper.

Step 4Spoon into 9x13 glass baking dish, sprayed with non-stick cooking spray. Crumble and sprinkle bacon on top.

Step 5Bake, uncovered, at 350 degrees for 1 hour, or until heated through.
